Expert Mode

While at the Main Menu, hold L1 + R1 + Start.  Continue to hold the buttons until the Character Selection screen appears.  Then, press X to select the game Mode and variation.

Secret Push Bike

While at a Character Selection screen, highlight a driver and press L1 + R1, L1 + R1, L1 + R1, and then hold L1 + R1 + Up and select your paper.
